Imported from Japan, this Wagyu is graded A5, the highest possible grade, ranking it the best of the best in the categories of meat yield, marbling, color, and texture. A5 Wagyu is so intensely marbled that it appears pink and white in color, instead of the bright red of regular beef. Our wagyu is the Kuroge ("black-haired") Japanese black cow breed from Hokkaido, Japan. The fresh, chilly air and idyllic natural landscapes of Japan's northernmost island make it an ideal place for raising Wagyu cattle.
Wagyu is so rich and flavorful that we recommend treating it like foie gras and other super-rich appetizers, and serving in small, restrained portions. Japanese A5 Wagyu contains essential fatty acids like Omega-3 and Omega-6, and has the lowest cholesterol levels of all meat, including chicken and fish.
