Wulf Fish's most popular domestic caviar! Hackleback (a.k.a. shovelnose) is the last American wild caviar. This small grain caviar is nearly pitch black in color. What it lacks in size it makes up for with its amazing firm texture and mild flavor.

Wild-caught in the Mississippi River, the caviar produced from American Hackleback has a true traditional caviar flavor heavily influenced by the natural river environment. Hackleback trade is highly regulated by state and federal government entities such as the U.S. Fish and Wildlife Service, which has helped the wild populations of this hardy and fast-maturing sturgeon species thrive.
