Prime Brisket Flat End

There are two parts to the brisket: the flat, also called the first cut, and the point. The flat end is, as the name implies, a flat piece of meat, with a thin ¼" layer of fat on top that helps keep it moist and juicy during cooking. If you are buying a brisket to braise for Passover or for any occasion, it's the flat end brisket that you want to bring home.
