NY Strip End-Cut steak is a beautifully-marbled cut that comes from the beef sirloin area. It is not only tender but also rich in flavor. Due to its proximity to the top sirloin, end-cut steak has a thin vein running through the steak. While not often the first choice for a NY Strip, it's still a fantastic steak at a great value. Simply cut around the vein once the steak is cooked.
